The aroma is mild, the mouthfeel is soft, and the meloniness is amazing on the palate! But the aftertaste is pleasant because the sweetness fades out and doesn't linger, and it's not too dry! It's a special junmai, but I feel like I'm drinking junmai ginjo! Uguisu in the garden is a really stable and versatile sake that can be enjoyed with a meal or on its own.

I went to the Kinegawa brewery opening! I tasted a lot of sake, but the new sake Shiboritate Nama-nihonshu was the best! I bought it! It had a smooth, refreshing and fruity taste with no astringent aftertaste! It was easy to drink even without any snacks! I was also impressed by the Junmai Sake Assemblage and Daiginjo Shizuku Shibori! I guess it tastes even better when you hear about it first hand at a brewery open house 😆.

Yuki no Bijin using Shinsei's No. 6 yeast: ❄️ Mild aroma and slightly gassy and tangy Moderate sweetness and dry. It is a good sake to drink as a food sake. It would be better as a food wine. It would go well with light sweetness and fat like sashimi or sushi rather than meat. Decided to be one of my favorite bottles.

I was aware that Nagasaki sake is sweet, but this was surprisingly refreshing! Unlike Jiran and Fukkai, the sweetness is kept to a minimum and the aftertaste is good. Personally, I like this sake in Nagasaki! Fugendake, which is also made by this brewery, was also refreshing at +4! I discovered that Nagasaki is not only for sweet sake!

It is indeed dry, but there is a slight bitterness from the alcohol, and the taste is a bit blurred... The aftertaste is also a little lingering on the tongue, giving it a solid feeling. It might be good with fried food.

Classic Sentori Solid A little chunkier than the Modern. However, it has a good balance of acidity and sweetness, and is not too heavy nor too sweet, so sake lovers will find it to be a bit like this! It is not too heavy and not too sweet, so sake lovers will be able to enjoy it. The sake is made using the "ikuhashi-zukuri" method, which gives it a stable and carefully crafted taste. Modern Sengoku Mukunin The taste is light. It is interesting to compare the taste with the classic one. It has a slightly apple-like acidity, similar to Nagasaki's Hajimari Hajimari!

Apparently it goes well with the cheese flavor of Umaibo (from the liquor store). Indeed, the sweetness of the cheese and the sweetness of the sake were linked and tasty at first, but as I drank it, the cheese became tasteless. It has a refreshing, slightly effervescent, low-alcohol (13%) taste, so it has an elegant feel like a white wine. The moderate sweetness may be perfect for an aperitif!

It goes very well with smoked food (smoked duck, smoked cheese) as well as dark Japanese food. I think normal smoked cheese or camembert would be better with cheese. The smoked cheese with wasabi in the picture was not so good. The mouthfeel is light, with a hint of banana, but you can feel the spiciness on your tongue. The finish is great. Almost no aftertaste while feeling the spiciness on the tongue. Is it sharp where the water is clean and wasabi grows? ((And HUNTER x HUNTER at its best!!!!
