The back label reads
The back label reads, "How can we bring out the clear umami flavor?
The back label reads, "Feel the elegant sweetness and lingering aftertaste.
It was elegant. It has a delicate taste, yet it has a structure or core.
As for the sweetness, I personally have a strong impression of elegant taste and very moderate sweetness. It is not a simple expression of so-called "dryness," but rather a delicate rice-derived aroma, nuanced like that of Kamishinko.

Round, clear, and clean drinking
The fact that it is made from Akitsu Yamada-Nishiki gives it a luxurious feel, but it is so delicious that even an inexperienced drinker can tell that the brewer really makes the most of it!

Brewery in Minamisaku-gun, Nagano Prefecture
100% Hitogochiki rice
Polishing ratio of 80% with low milling and 20% polishing
The label clearly states that the yeast is alive.
When the bottle was opened, it made a light sipping sound, but when it was poured, there was a strong gas.
The taste is dry, but there is a good natural lactic acid nuance, and it is very drinkable.
It can be served with a wide range of dishes.

It has a pleasantly smooth texture without a touch of gas and freshness, and the flavor is wonderfully balanced.
The aroma is not necessarily ginjo, but it is gorgeous. The sake-like quality is not strong, but the tenderness of the rice is.

The owner of the brewery told me that it was "like a melon," and it is exactly a melon.
It is a melon dominantly.
