若いビジネスマンが50年ぶりに蔵を復活 江戸時代中期に創業した大嶺酒造。株式会社として設立したのは大正11年(1921年)ですが、1960年代に入って休業の憂き目にあってしまいます。しかし2010年、50年以上の休眠を経て復活しました。蔵を引き継いだのは、ニューヨークなどで海外ビジネスの経験を豊富に積んだ、美祢市出身の秋山剛士氏(現大嶺酒造のファウンダー)。農業と地域資源を軸に、地域の未来につながる産業をつくりたいというコンセプトのもと、新しい大嶺酒造がスタートしたのです。 地元の恵みを生かした酒造り 美祢市は3億年の歴史をもつ神秘的なシラス台地の「秋吉台」、東洋一の鍾乳洞「秋芳洞」など、雄大な自然を誇る場所。仕込み水は日本名水百選に選ばれている「弁天の湧水」を使用しています。神社の境内から湧き出る清水はコバルトブルーの美しい色で、酒造りに必要な天然ミネラルを多く含み、「Ohmine」シリーズの味わいに欠かせません。米は契約栽培の山口県産山田錦のみ。さらに、日本酒のピュアな味わいを感じられるようにと、発酵を抑える新技術を用いて、原酒にもかかわらずアルコール度数を14度に抑えています。 さらにこだわったのが、ボトルデザイン。秋山氏はスウェーデンに渡り、北欧で有数のデザイン集団「ストックホルム・デザイン・ラボ」の創設者と面談し、デザインを依頼したのです。そして完成したのが、コニャックなどに使う白地の陶器に、黒地の米を描いたシンプルなものでした。個性的なデザインが増えている昨今の日本酒のなかでも、特に印象的なデザインです。スタイリッシュなラベルと、アルファベットを用いた銘柄名には、国内はもちろん、海外に日本酒を広めたいという思いがありました。 海外マーケティングで評判呼ぶ 外観に負けないスタイリッシュな味わいが、ミシュランの三ツ星レストランや、さまざまなブランドとのコラボレーションなどを通して高く評価され、ニューヨークや香港など、世界6ヵ国で展開されています。2013年には、スイスで開催された、ダボス会議2013のなかで、日本政府が主催した晩餐会で各国の首脳に振る舞われました。SAKETIMES | 日本酒をもっと知りたくなるWEBメディア

Orihunter 2️⃣th book Following yesterday's visit, today we have another lovely beautiful snow woman from Yamaguchi prefecture 😀. After all, this sake is also a must-have nigori sake😇. When the bottle was opened, there was a rather loud noise, but there was no automatic stirring and the supernatant was removed without incident 😀. The supernatant had a weak melon squash nuance, but the mixture turned into a more complex and delicious sake with some dairy and sweet rice nuances mixed in 😇 I was impressed with the sake on our table today 😇 We had a gorgeous lineup with Jikin, Shinshu Kamerei, Yukiten, and Yukiojo 😇.

I'm a first time snow woman😊 I'm planning to drink a lot of nigori this winter ❗️ I have been wanting to drink this Yuki-Onna since before the season started. First, open the bottle🎉. The pressure of the gas you feel as soon as you remove the aluminum cap. When I opened the cork, I heard a popping sound 😳. I don't know if it's because it's been chilled for quite a while, but I don't feel any spills or rises. I'll take the top off first: ❤️ It's SHUWAN again today 😎. What I feel on my nose is the aroma of koji. The fruity aroma is faint. When you drink it, the gasiness is not as strong as it should be. It has a slight hint of chili. The taste is sweet and fruity, as is typical of Omine, but I think it tastes more bitter than the regular Omine 3-grain. After checking the taste with the supernatant for a while, I turned the top and bottom back to the nigori. Then, it was turned upside down and turned into nigorigo. Snowman ⛄️ was very Ori Dance (©️ Jay & Nobby 😊), but this one is well mature 😁. This one is well mature 😁. Taste, yeah yeah yeah, this this this. Milky fruity with nigori goodness ❗️ Delicious ❗️ For some reason, when I turn it up and down, I get a strong sense of gas. But it's not as bad as the snowball though. This is very good, but if I had two in a row, I would buy the snowman ⛄️ 😁

Daimine 3 grains, Winter no Otosore, Active Nama When the bottle was opened, there was a gas escaping sound, not so much as to fly out of the bottle. When poured, the bubbles burst into the air. This is one that I have been interested in for a while. I was able to buy it this year. The aroma is subdued, yet sweet. In the mouth, a milky sweetness with a sense of grain comes first, followed by a gas-derived chouxiness, and then a finish that cuts through with a slight bitterness. The illustration on the label is also nice.

This is also a must for the muddy season, Daimine's three-grain winter arrival. This year, my usual liquor store was sold out, so I looked at the local Queen's Isetan and found it there, so I bought it! However, this was a failure...! It was a failure! This is the first time in winter that I managed to purchase sake! At this time of the year, my lineup of new sake is lining up in the fridge because of the excessive demand for new sake and nigoris (nigori)! Following the last Shiraiginoumi from Kangiku, The second Oumine! It has a mellow sweet taste like Oumine, but has a nice sharpness with a hint of bitterness at the end! It's just delicious! It was served in a glass of Yuzumogetsukka, a Shizuoka Prefecture Yuzumo Process that I purchased today!

Good evening. The park nearby was crowded with families 😃. The gingko trees were beautiful. I haven't had a drink at Omine for a long time... You can see a lot of ginkgo trees at Sake-no-wa... I don't have to tell you how it tastes! It's sweet and then delicious! LOL! Low alcohol content and easy to drink It's gone in a blink of an eye😅. Daimine 3 grains, the advent of winter. We have finally been able to receive the most popular nigori sake, which is becoming more and more difficult to obtain as the popularity of nigori sake increases each year! It has a mellow aroma with hints of muscat and melon, and a fruity sweetness that rushes into the mouth with fresh gas. The milky umami flavor is quickly and easily quenched, just like light snowfall. I would like to drink this every year as a regular winter sake!
