I asked the staff which sake is more 甘口 and he recommended this to me. A sake coming from hokkaido, which matches with the sashimi they serve, also mostly from hokkaido. The sake taste sweet as the staff described, strong mellow, the taste stay in my
mouth for a while. Very nice to drink with nice omekase!
I think it's the strongest to pair with food.

It goes well with fish, fish paste, and shiitake mushrooms.
Especially with shiitake mushrooms, I could feel the sweetness strongly.

The sake had a clean rice aroma, a refreshingly cool sweetness that penetrated easily into the mouth, and a refreshing aftertaste.
This one is brewed by Tanaka Shuzo, the only sake brewery in Otaru City, Hokkaido.

Later that day, bouken-san scouted us out and we connected.
He is a car DIY and a YouTuber who tours sake breweries across Japan.
Robin-san brought his own sake.
Otaru Takaragawa Junmai Daiginjo.
This was a sake that everyone had never seen before, and only kan-san, who travels all over the country, knew about it.
It has a fruity taste with a clear and smooth mouthfeel. I also thought the taste was clear and well-balanced and the water must be good.
When I checked the name of the brewery, I found that it was called Kyokui-Tanaka Shuzo, which is difficult to read.
It seems to read "Kanei Tanaka Shuzo.
According to the Internet, they produce about 500 koku.

This is the only sake brewery in Otaru. It's not something you see in Kansai, and it's completely new to me 😍.
It has a very clean and refreshing taste.
It felt like a fruity dry type.
It's fun to be able to drink a wide variety of sake without being biased towards a particular type of sake 🤗.
I was very surprised to find out in conversation with Robin that she was a senior in high school 😳.
We met by chance at Kurabiraki, exchanged lines, and then met at an off-line meeting...what a miracle! ✨️
