This sake is made by the owner of the brewery himself using sake rice that was manually sorted and salvaged from the sake brewery that was completely destroyed by the Noto earthquake this year. Some say he may never be able to make this junmai ginjo again.
While the story is amazing, the taste is also wonderful.
I had another glass of this precious sake.
I hope we can do it again next year.

Welcome party, the second. Many local people do not know what kind of local sake is available, so as the Sake-no-Wa-Uwa-Uwa-tai, we brought some to the company's drinking party to convey the charm of this sake.
This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening.
Nakajima's gentle umami and Azuma's sharpness. It's a good taste. It's a nice taste.

Next is Ishikawa Prefecture's booth.
Here, Noto Sake was the main product, and they were offering tastings for a fee of 50 mL ¥ 300.
Looking back on it now, I have mixed feelings because all the breweries had suffered greatly from the Noto Peninsula earthquake on New Year's Day.
I chose Noto Suehiro's Ryo this time.
I chose it thinking that it might be a little bit like "Ryo Ishikawa.
It is a little sticky on the palate, with a delicious rice flavor and a little bit of alcohol, and it goes down smoothly.
I thought that junmai sake is easier to grasp the characteristics of the brewery since all the sake so far have been too beautiful 💡.
This was my first check-in in Ishikawa myself✨.
I hope I can continue to drink and support Ishikawa sake in the future 📣.

We received sake from the Nakajima Sake Brewery, whose store and other facilities were destroyed by the Noto Peninsula earthquake and suffered extensive damage. This is the first time we have received sake from this brewery.
