I bought this sake at Takata Takata Sake Brewery when I visited Wajima last year. The store was inundated by the torrential rains that followed the earthquake, and although they finally managed to fully reopen for business in late March, the online store has been suspended.
The brewery was also severely damaged by the earthquake, and they are working with another sake brewing company in Ishikawa Prefecture. We will continue to pay attention to the reconstruction of Noto without forgetting about it. It is not easy to drink only Noto's sake, but....

Good evening, Jay & Nobby. Yes, Noto Suehiro. It is like Shinshu Kamerei to Kamerei. There is a lot of good sake and sake breweries. There are so many delicious sake and sake breweries that it is difficult to repeat purchase.
It is mildly sweet, but the acidity that comes after makes it easy to drink. It has just a slight yogurtiness. Wouldn't it go well with appetizers and meats with strong flavored sauces?
We had a sake tasting set and oden at Kanaeki Chikuwa.
I think 2 out of 3 were dry.
I'm too stupid to understand the difference other than "this is dry".... But it was good because it was delicious!
The dry one went well with the Kanazawa oden! And these two types of snacks also went well together... I have so many fateful encounters with both sake and snacks that I can't stop crushing on them.

This sake has a rich, umami taste with the flavor of a pure sake, and a strength that is commensurate with its strength.
When heated, it becomes softer on the palate and the strength is more pronounced, making it a delicious sake that is drinkable either way.
It seems that this sake was brewed at the Kamiizumi brewery (Higashi Shuzo) after the brewery was destroyed in last year's earthquake, and the collaboration not only in the production but also in the label is quite nice.

The Nakashima Brewery in Wajima was damaged by the Noto Peninsula earthquake. The brewery borrowed facilities from Azuma Shuzo in Komatsu. Nakashima brews for softness and Azuma brews for crispness. The best of both worlds.
Mellow. Fruity but mild aroma. It has a slightly refreshingly acidic taste with a well-cornered flavor and throat.

Don't stop #Noto's sake on Makuake!
