Pure Ibaraki, which uses Hitachinishiki and Hitachi yeast, has been on the decline in recent years, but it is an interesting project that I hope will continue.
Hard, light and refreshing, just like Hitachinishiki.
I think it's gotten calmer and deeper over the summer.
It's refreshing even when heated up, and would go well with grilled fish.
It has a strawberry-like sweetness and flavor when heated and cooled, and is good on its own as well.
It's a small brewery that is mostly consumed locally.
It's a privilege for local people to be able to enjoy sake like this.

We thought we'd compare the hiyaoroshi, but they're all so good we can't compare.

Obtained by Saketaku August flight.
Compared to its counterpart Satomi, it has a good balance and comprehensive impression.
It has a good balance of sweetness, spiciness and acidity, and was easy to drink.
It seemed to go well with any meal, and if I was unsure about a sake, I would pick up Hinode Tsuru.
The aroma is an alcoholic scent that comes with a cool feeling, and I felt it was addictive, similar to Kuroryu.

Saketaku August delivery.
This is the Ibaraki Domaine version of Hinode Tsuru. The rice, yeast and water are all produced in Ibaraki.
I drank the regular Hinode Tsuru, but this is the first time in a long time that I tasted a pure Danrei dry sake. It is spicy and very refreshing.
It goes well with squid and shrimp.

When opened, it has a calm and refreshing sourness typical of Miyamanishiki. When served cold, it is refreshing and can be drunk like water.
After a few days, the sweetness comes out, smooth, mellow and gentle.
It's a different yeast than the junmai sake I had the day before yesterday, and this one was a blend of SYS and #10, I think it was a blend of SYS and #10? It has more sweetness and depth.
Apparently it was made to commemorate the 200th anniversary of the company's founding, but other than the color of the label, it's pretty plain. It's profound. It makes me want to cheer for Gazen.

This is a (supposedly) honjozo sake loved by the locals in Satomi Village. It's a sake like a sake. It sometimes comes with a throbbing sound and makes you want to eat Saki Squid.
At Ibaraki Jizake Bar Mito. I only asked for one drink, but they offered me one as a complimentary drink.

It's a beautiful, light and dry wine, but you can feel the flavor afterwards, and it's a great friend of rice.
According to the brewer, it's a combination of Miyamanishiki and 310. The former Satomi Village is located in the countryside in the mountains of Ibaraki Prefecture, but the brewers and the sake are very refined.
