When opened, it has a calm and refreshing sourness typical of Miyamanishiki. When served cold, it is refreshing and can be drunk like water. After a few days, the sweetness comes out, smooth, mellow and gentle. It's a different yeast than the junmai sake I had the day before yesterday, and this one was a blend of SYS and #10, I think it was a blend of SYS and #10? It has more sweetness and depth. This is a (supposedly) honjozo sake loved by the locals in Satomi Village. It's a sake like a sake. It sometimes comes with a throbbing sound and makes you want to eat Saki Squid. At Ibaraki Jizake Bar Mito. I only asked for one drink, but they offered me one as a complimentary drink.
