Driving in Tanba Sasayama. We happened to pass by the Karibaichi Sake Brewery, so of course we stopped by. I enjoyed it with some mackerel sushi I bought along the way. I have recently started collecting sake cups with the brewer's name on them.
Clear and colorless. Fruity aroma reminiscent of lychee. The intensity of the aroma is medium. The mouthfeel is light. The nose is also fruity, with a hint of lychee. The light acidity is followed by a rich astringency. It has a slightly long aftertaste. It is a fragrant and mellow sake.
Slightly honey-colored.
It is a slightly sweet, light-bodied daiginjo that is easy to drink and has no peculiarities. However, the richness and fullness when and after swallowing are quite impressive. It leaves a satisfying aftertaste.
It is a very dark nigori sake, with a strength of 18 degrees Celsius.
It is a thick, creamy, high alcohol sweet sake. The bitterness of the nigori is not so strong, and the sweetness is thick and rich. However, there is a spiciness from the high alcohol content.
This sake is from Tanba Sasayama, Hyogo Prefecture.
This is also a sake that is rarely sold in the Kobe area, and was obtained at the Hyogo Sake Expo.
According to the brewer, "Production is so small that it is almost exclusively sold directly to the public.
We started this one cold.
The taste is broad and full of sweetness.
Soon after, a sharp and stimulating spiciness comes in to tighten up the aftertaste! Because of its sharpness, the sweetness does not become dull in any way.
How about when it is heated up?
The sweetness comes to the surface and the spiciness disappears in a flash.
The spiciness is still impressive. The spiciness is impressive. It firmly accepts the taste of the snacks.
We enjoyed a short-lived sake party while drinking the rest of the "Tamba" we drank last week.

The last of a set of six Shugetsu bottles. Slightly citrusy. Among the 6 bottles, this one is the easiest to drink without any peculiar taste.
After drinking 6 bottles, my impression is that it is not to my taste and the taste is generally subtle.... I would have been happier buying 3 bottles of my favorite quadruple.
It is sweeter than the other Shugetsu wines I've had. It is refreshing and fruity, but a little peculiar. The rice is probably Yamadanishiki.

This costs over 1000 yen for 300ml....
After a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake.
I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here.
There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu.
It's definitely better than the first unfiltered draft I opened.
Quite a rough type. Cloudy white like makgeolli. When you drink it, the alcohol taste is more pronounced than the sweetness. It is an active nigori, but the sense of liveliness is moderate. The acidity comes towards the end. It has an old-fashioned taste, but it is delicious in its own way.
It may sound negative, but it is really delicious. Too much gusto at first 🤣 but the citrusy aftertaste is also nice.
The fourth one, I thought it was very elaborate, even the original wrapping paper was prepared. I wonder if there is a demand for gifts?

I was curious about this brewery because I was allowed to have a private drink at a liquor store before.
I bought a set of six 300 ml bottles directly from the brewery. I can go there to buy it, but it is quite expensive for a 4-pack....
I'm guessing it's a high strength sake, so I'm guessing it's a raw sake. Distinctive and unique flavor and fresh taste. It seemed a little more classic in flavor. It has a sweetness, but the overall peculiarity of the taste is bothersome.
It has a strong alkali taste, which is a concern. To be honest, it is subtle.
Hmmm... I wonder if it was a mistake to order it. Bad start 😢
