I don't know this one either.
It's Oita sake.
Let's try it!
I thought it would be sweet because of the ogara-mi, but it was surprisingly dry!

Ingredients: Yamadanishiki and home-grown Hitomebore
Polishing ratio: Koji rice 50%/Kake rice 55
Alcohol percentage 16
Sake degree +6
Acidity 1.5
Yeast: Association No. 9
This is a 55% polished special junmai. It would not be surprising to find fruitiness and floral notes in a rice this polished, but the strong rice flavor and caramel aroma with a sense of maturity are more impressive than such ginjo aroma. However, the acidity is low and the lingering aftertaste flows smoothly, so perhaps this is where the balance is achieved.
I guess this means that it is strong enough not to be defeated by Nakatsu Karaage (fried fish), which is a specialty of Oita, or other strong food items.
The entry is clean and refreshing. It is moderately sweet and tasty, and you will never get tired of drinking it. The astringency gives it a nice sharpness. Yamada-Nishiki, Nippon-Hare. Coppa ham and
I bought it when I stopped by Oita City on my way back from Miyazaki and Minami-Kyushu in Kagoshima because the label was so nice 🚗.
Following the Sentoku I bought in Miyazaki, this one was also a collaboration sake with a liquor store, so I felt like I got something out of it😇.
Polishing ratio 60
Alcohol content 16
The image on the label makes it look like a gorgeous modern type of sake, but on the contrary, the aroma is gentle, and the spiciness comes in gently like water, and then it quickly dies down 😊.
It's dry but easy to drink, and before you know it, it's gone from the cup and you'll be drinking more 💦.
For the entrée, I grilled the striped horse mackerel (🐟️) I bought in Oita, served it with Kagoshima satsuma-age (fried fish cake) and Miyazaki peanut tofu.
The striped horse mackerel brings out the flavor and the satsuma-age brings out the sweetness.
It is a sake that is easy to pair with food 🍶 as a food sake 😋.
Hi Jay & Nobby 😃.
It sure looks like a square bottle 😳
The bottle is a regular four-pack 😄
The way you take the picture changes the way it looks, doesn't it?
I too had only met Chiebijin for Oita sake 🍶 so I'll definitely refer to it 😊.
The second bottle is a sake from Oita, which has been a long time coming.
When you drink it, you will enjoy the rich natural scenery of Bungo-Ono with its rural landscape.
Slightly dry but overall neutral taste.
The distant umami and citrus aroma are pleasant and very good as a food sake. 🙆🏻
It is nice to see that even in Kyushu, a shochu powerhouse, sake is being made in the good sense of the word: ☺️
