fonia sorra
Sake with yuzu, sansho, and lemon peels added during fermentation.
Other brewed liquors
Like a fruit wine, but in a different genre from sake
Easy to drink
Wakaze is a brewery in Sancha, and there are many restaurants in Sancha that serve dishes that go well with this sake.
Probably my first doburoku.
Cacao nibs, cacao powder, and vanilla beans are used as secondary ingredients in a two-stage brewing process with high-temperature white rice malt.
The aroma is vanilla chocolate with a hint of sourness.
The taste is different from what it looks like, but the sourness from the white koji is strong and the taste is rather refreshing.
I was expecting a sweeter taste with the sweetness of the rice and the vanilla chocolate, but on the contrary, the bitterness of the gori sake and the bitterness of the cocoa harmonized to create a bitter aftertaste.
A doburoku with a complex and deep flavor that is both a name and a dessert for adults.
Wakase Luna.
A Christmas drink.
Not too sweet, fragrant and fruity, but it's still sake, so it goes around a lot...
It's sweet, but it doesn't interfere with the meal.
This shop always has WAKAZE sake in its collection!
The brewery is located in Sangenjaya, Tokyo, but the company is located in Tsuruoka City, Yamagata Prefecture.
We asked them to combine the sweetness of Junmai Daiginjo with the impact of tea.
WAKAZE's sake is always a little bit fancy, but it makes me want to drink it somehow!
It's been a while since I've had one, but this one is delicious!

About green tea
Blue tea is known as a semi-fermented tea, but the degree of fermentation is very wide, and there are many kinds of tea with different tastes among blue teas. In this case, we used Wenshan Baosteel tea, which has a low degree of fermentation (close to green tea). Wenshan Baosteel tea has a refreshing aroma similar to green tea, but it also has a lovely flowery flavor. In addition, it also has a strong flavor like a mountain. By using such a luxurious Wenshan Baoshu tea, it gives the liquor a complex and powerful flavor.

This is the second time for me to drink WAKAZE's sake.
The doburoku is a collaboration between WAKAZE in Sangenjaya and Tsuchida Shuzo in Gunma😲.
The rice used is not Uruchi rice, but Princess Sally, which has a unique aroma known as aromatic rice. It says that you should enjoy not only the taste but also the texture 😉.
The bottle is full of doburoku.
I've never encountered a doburoku with such an impact before😄.
I'll take it with a mixture of anticipation and anxiety😊.
The aroma is like melon juice with volatility.
When I poured it, a film formed on the surface.
The rice is crushed and spreads in your mouth 😄.
The taste of rice? And just when I thought I was going to feel the flavor, it turns into a refreshing sour😄.
Hmmm? Where is the taste of fragrant rice? When I was looking for it, I found that when you eat freshly cooked rice, you feel the first taste that comes out, and then the taste that comes out stops there, and it seems to be different from the usual rice taste😲.
I don't know how to describe it 😅.
I'm actually not a big fan of doburoku, but this sake has no nastiness or peculiarities, and I can enjoy its unique flavor while drinking it😍.
It was an impulse buy but I recommend it 😁.
This doburoku is made from a special type of rice called Princess Sally. It has a natural sweetness from the rice and a natural aroma. It's not too sweet and has a great aftertaste.
I thought that Jubiroku was the best doburoku, but this is quite good.
I was a little nervous when I opened it without looking at the warning on the bottle...
This is a sweet sake with a foamy taste. I've only had doburoku once before, so I was a little defensive, but I think it's easy to drink.
Finally, Tokyo was filled.
