At a sake bar in Yamagata. The last time I drank it, I had a strong impression that it was a Brazilian sake, so I ordered it to check again. I could taste more ginger flavor than the last time I drank it. The Brazilian impression seems to have faded. The moderate sweetness was pleasant on the palate, and the herbal aroma made it easy to drink and a delicious sake.
Aged in wine barrels. The flavor of the barrels gives it an old wine-like taste, and the sweet flavor and sour feeling are well balanced. It was also fresh with a slight smokiness.

Rice is "Tsuyahime" from Yamagata Prefecture.
Hops are French hops (Aramis, Strisselspalt, Mistral).
The aroma of hops is very strong even when you are far away from the brewery.
The fizziness is light.
The hops are strong, but there is a bitterness.

This is the third time I have had WAKAZE.
The rice is Tsuyahime from Yamagata prefecture, the rice malt is also Tsuyahime from Yamagata prefecture, and the blueberries are from Kodaira city, Tokyo 😎.
