Yesterday, I kept it at room temperature, and it tasted gaseous and sharply acidic, followed by a gradual umami flavor.
Today I chilled it in the fridge and the gaseous taste became a little milder, maybe because I let it sit for a day? The mouthfeel is also milder, and the umami and bitterness are more distinctive.
I would drink it at the end of the season or at the end of summer with pickled cucumbers and big eggplants in the fall.
The moment it hits the palate, the impact is impressive, as if one were drinking a carbonated beverage.
Unusually for me, who prefers relatively mellow sake, this is my favorite sake, which, despite its clean taste, can be drunk on its own and still be delicious!

Since I visited Osaka Expo, I went to Heiwa Doburoku Namba Brewery in the basement of Osaka Takashimaya with a wish for peace. Freshly made doburoku and kiddos from the server are available.
A coined word combining "Kii-no-kuni," the old name of Wakayama, and "land (do).
During the postwar turmoil, brewing had to be suspended, but Yasumasa Yamamoto, the second generation brewer, made a petition speech to the Diet and received permission to resume brewing. The desire at this time to "brew sake in peaceful times" was the origin of the brewery's name, "Heiwa Shuzo" ("Peace Brewery").
This sake is not Kido, but Honkido, with a lower alcohol content, and the characteristics of the water, such as purity and softness, which are typical of Kido.
The intention is to make it the standard from now on.
This sake goes with everything.
