On a trip to Fukui, we stopped by the Torihama Sake Brewery. This is the second time I have visited the brewery. The chimney is magnificent and quaint. This is Torihama's Junmai Ginjo. There is no description on the label, but the rice used seems to be Gohyakumangoku. The rice used seems to be "Gohyakumangoku" (five hundred million stone). There is a ginjo aroma on the nose. It has a sweet, ricey mouthfeel. The taste is not beautiful, but firm. It is not modern, but it is not classic either. It has a local, local sake feel to it. The taste is also very pleasant.

It has a light matured taste due to being left at room temperature for half a year. The sweetness and umami characteristic of Torihama spreads. It has a lingering aftertaste, but it is relatively light for its richness. The sweetness stands out when the sake is lukewarm, but when it is warmed up, it is smooth and tasty again.

One year aged Hatsushibori. The sweetness is typical of Torihama, and it is good. If you like it, you may like it. I would like to match it with Chinese food.

I happened to see a brick chimney from the street I was passing, so I went there, and sure enough, it was a sake brewery. I went there, and sure enough, it was a sake brewery. I had never heard of this brewery, and of course I had never drunk it, so I bought it without any expectations. Before I opened the package, I noticed that it was aluzoe, which lowered my expectations even more. But when I drank it, it was a complete disappointment... What I didn't expect was what I didn't expect... I mean, it was a very tasty drink 🙌. Even the alcohols are so good, you hardly notice them.

Purchased from the Torihama Sake Brewery during a visit to the brewery. It is a tasteful brewery with a splendid chimney. It has a sweet taste and a rich flavor. This place is near Mikatagoko (five lakes). There is a local dish of sweet boiled river fish, and it is said that the quality of the sake is as good as that of the fish. I see. The taste of local sake is rooted in the local area☺️.
