Home brew. The color is pale yellow. At room temperature, it has a clear mouthfeel that is hard to believe it is 90% polished, but the acidity from the mizu-hashiro is a little harsh and the umami is a little weak. When heated to 50°C, the mild umami expands and the acidity becomes gentle, which I prefer.

Project Foothills 27 Presents. Small 500ml bottle with a stylish label👍. The color is clear and the aroma is plummy 🤔The palate has a refreshing acidity with a clean spiciness. Slight sweetness. It's like a fruit wine. I would like to have it with a glass of wine at a stylish sake bar ❗If you want to match it with a meal, I think it would go well with Italian or French cuisine. I'm eating yakitori and drinking this by myself... 😓I totally made the wrong choice💦Not that there's anything wrong with yakitori... 😅

Purchased at the Tenzan Sake Brewery. It's made with wine yeast, so it goes well with Western food. It's hard to make Japanese snacks overseas because of the ingredients, so it tends to be Western food, so this is a good match!

Saga, Ogi City, Saga Prefecture. Tenzan Sake Brewing Company. re:echo 2020. Rice: Miyamanishiki 100% Rice polishing ratio: 50%. Alcohol content: 14%. Have it with cold sake. The color is clear and transparent with a recognizable yellow tinge. The scent was described at the store where I bought it as being like blackcurrant or blackberry, and my wife said it smelled like blackcurrant, but I personally don't understand it... I'm not good at describing scents... The mouthfeel is sour with a strong acid impact at first, but the aroma that goes through the nose pulls the berry aroma out. A little bit of liquor can be felt at the end, but I recommend it to those who like sourness. They say it goes well with thicker, oily dishes such as Chinese and meat dishes. The re:echo I had before had a sweet taste, but this one is quite unique. It's a challenge sake made with wine yeast and white koji. As a lover of white koji, I have to give it a try.

This is a famous brewery in Shichida. There are many kinds of sake made with wine yeast, but this one seems to be made with red wine yeast. It definitely feels like a red wine when you drink it. It seems to go well with meat and Western food.
