Rice polishing ratio: 50%.
Alcohol content: 14%.
Have it with cold sake.
The color is clear and transparent with a recognizable yellow tinge.
The scent was described at the store where I bought it as being like blackcurrant or blackberry, and my wife said it smelled like blackcurrant, but I personally don't understand it... I'm not good at describing scents...
The mouthfeel is sour with a strong acid impact at first, but the aroma that goes through the nose pulls the berry aroma out.
A little bit of liquor can be felt at the end, but I recommend it to those who like sourness.
They say it goes well with thicker, oily dishes such as Chinese and meat dishes.
The re:echo I had before had a sweet taste, but this one is quite unique.
It's a challenge sake made with wine yeast and white koji.
As a lover of white koji, I have to give it a try.
