Home brew. The color is pale yellow.
At room temperature, it has a clear mouthfeel that is hard to believe it is 90% polished, but the acidity from the mizu-hashiro is a little harsh and the umami is a little weak.
When heated to 50°C, the mild umami expands and the acidity becomes gentle, which I prefer.
