I was served a very fine and precious sake by this retiring guy.
Is this daiginjo?
It is so soft that you don't feel it's alky. But the alcohol content is 17 degrees.
It is excellent.
Kachikoma Shiboritate Honkai
Hiragana Kachikoma, this is the first time I have had it.
It is freshly pressed sake. It is al-soaked, isn't it?
Rough mouthfeel. It has a strong umami flavor, and the alcoholiness on the nose is nice👍.
The moderate sweetness and the crisp finish are pleasant and keep you drinking.
The second and third days, the umami seems to become more refined. The sweetness is not too assertive and the alcohol is felt on the tip of the tongue. Delicious😍.
I compared it with Kachikoma Junmai Ginjo.
Less ginjo aroma, but with a fresh aroma characteristic of nama-zake🌾.
It has more rice flavor, freshness, and mellowness than the junmai ginjo 🙄 It has an alcohol content of 18%, but it doesn't bother me, I can drink it easily 🍶.

I also tried it casually warmed up (or warmed up to human skin?) Try the warmed sake 🍶🍶.

When I opened it 5 days ago, I thought it was spiky and I didn't like it. But today it's mellowed out and goes well with spicy and sweet food. ☺️
