Geographically, we are surrounded by the shochu kingdoms of Kagoshima (for sweet potato shochu) and Hitoyoshi (for rice shochu), and the climate is not conducive to sake brewing.
The taste is characterized by a fluffy sweetness of rice followed by a rich and deep flavor, and a powerful umami sake that can take on even the richest dishes.
In the past, the brewing of sake was left to migrant toji (brewers) and seasonal workers, but in recent years, the fourth-generation toji (brewer), who has returned from training in Tochigi Prefecture, has been appointed as toji.
