I was a little worried. It's not refrigerated, but I wonder if it's okay.
The color is slightly yellow. The aroma is brown sugar sweetness and caramel bitterness. Oh, it's ripe after all.
The mouthfeel is smooth. But soon, the acidity, sweetness, bitterness, and umami that are typical of aging spread quickly. Then there is a high alcohol aroma.
This sweet bitterness is not the original flavor. The original taste was clean and dry, but after aging, the sweetness and bitterness came out. It's not bad. However, it's a very expensive sake, so I'm sure the taste has changed quite a bit.
If I were to compare it to Ghibli, it would be Jill from "Nausicaa of the Valley of the Wind. He is the chief of the Valley of the Wind and the father of Nausicaa. He has a majestic beard. He is unable to move his body due to the poison from the rotting sea.
A year and a half ago, he was healthy enough to fly, but the poison from the rotting sea has already taken its toll!
