Serve hot with a hot sake.
It has a clean, clean dry taste with little bitterness.
Easy to drink as the alcohol smell is not overpowering.
When the temperature drops, it has a soft rice flavor.
It has a nice nutty aroma.
The Himi cold yellowtail was sharp and exciting.
I wanted to order more, but the line and rush of orders scared me away.
I will come back again.

May starts today!
So it's April 1st in the lunar calendar too 👐.
Seems like a good time to start something new✨.
Tonight's sake is Yamagata's "Uyo Otokoyama Junmai Ginjo"!
I first learned that the north and south of Dewa Province (now Yamagata and Akita Prefectures) are called "Hanyo and Hanyin" just like "Sanyo and San'in"!
The rice is polished to 50% flat rice and made with Yamagata KA-1 yeast of the "Kyokai No. 9" series.
You can feel the sweetness of the rice, but it's so crisp that you think, "Huh? It's so sharp! A fresh sensation 😳.
I thought once again that this is the kind of sake that doesn't interfere with food!
Sake encounters are so much fun 😊.

The future of sake has long been proudly displayed at Kurokabe, a long-established sake brewery located in downtown Yamagata.
Tasty and delicious! I'm sure you'll enjoy it 🍶.
Hazamae tasted Yamagata sake.
I imagined it would be dry because of its manly name, but it tasted quite sweet and mellow.
It was a delicious sake with a taste that I personally liked.
Hanyou Otokoyama Junmai Ginjo New Sake
Almost no aroma!
The taste is quite sweet and sour! But it is very clear(?). but it quickly disappears from the mouth 😆.
It was my first time drinking this brand, but it was right up my alley! I like the hanpukai, it's a great way to discover sake I didn't know existed! 😁😁
With a sake strength of 4.0, acidity of 1.3, and amino acidity of 1.2, it has a sweetness followed by a dry crispness that, in my opinion, is typical of sake from the Tohoku region!
