So it's April 1st in the lunar calendar too 👐.
Seems like a good time to start something new✨.
Tonight's sake is Yamagata's "Uyo Otokoyama Junmai Ginjo"!
I first learned that the north and south of Dewa Province (now Yamagata and Akita Prefectures) are called "Hanyo and Hanyin" just like "Sanyo and San'in"!
The rice is polished to 50% flat rice and made with Yamagata KA-1 yeast of the "Kyokai No. 9" series.
You can feel the sweetness of the rice, but it's so crisp that you think, "Huh? It's so sharp! A fresh sensation 😳.
I thought once again that this is the kind of sake that doesn't interfere with food!
Sake encounters are so much fun 😊.

Hazamae tasted Yamagata sake.

The taste is quite sweet and sour! But it is very clear(?). but it quickly disappears from the mouth 😆.
It was my first time drinking this brand, but it was right up my alley! I like the hanpukai, it's a great way to discover sake I didn't know existed! 😁😁

Yes, this kind of taste and smell is nice to have since it's so cold.
When I asked for the stingray liver as an appetizer, the fat came out a little too far in front and it was a mistake. The sesame oil was too noisy.
I think shrimp or tuna sashimi would be more suitable.
I think it would also be good with ara soup.
If I left it longer, it would become a more palatable alcohol, but it was too cold, so I left.
