This sake is made in a small sake brewery in Nagano Prefecture.
I was attracted by the label design and the name.
The aroma is very nice even though it is a special junmai because it is an unfiltered, unpasteurized sake.
The taste is clean and easy to drink, so it goes well with meals, and you won't get tired of drinking it even if you drink it every day.

The owner, who is from Nagano, told me that it is not widely distributed in Tokyo.
I don't think I've ever experienced a sake made with Hitogochi.
It's clean and refreshing, but you can still taste the rice.
It's not my favorite sake, but I think it's a good sake.

The accompaniment is shabu-shabu of pork.
The taste of water, refreshing sourness and deliciousness can be felt deeply, and a slight bitterness later.

Evaluation: A
Light yellow color, sweet chestnut, pear and peach on the nose, clean watery attack with a hint of bitterness and umami on the palate, medium body with a clean acidity, good sharpness. The after-taste is slightly sweet.
