I'm a bit addicted to Nagano sake these days 😁.

It smells like a refreshing dry sake ☺️.
In the mouth, it's as clear and dry as expected.
However... it only lasts for a moment, and the soft sweetness and acidity spread out to give you a refreshing and enjoyable taste 😍.
It's a beautiful sake 😚.
On the third day, I tried heating it up, and the umami was concentrated at about top-heat to hot, and it became incredibly delicious, glossy and thick 😍.

The owner, who is from Nagano, told me that it is not widely distributed in Tokyo.
I don't think I've ever experienced a sake made with Hitogochi.
It's clean and refreshing, but you can still taste the rice.
It's not my favorite sake, but I think it's a good sake.

The brewing water is probably soft, so the structure of the aftertaste is round and gentle.
When enjoyed well chilled, the balance between sweetness and flavor is well balanced, but a slight rise in temperature can disrupt that balance.
The impact of the first sip is good, and I think it would be an even better sake with more research into acidity. Thanks for the treat!
