7/10 The owner, who is from Nagano, told me that it is not widely distributed in Tokyo. I don't think I've ever experienced a sake made with Hitogochi. It's clean and refreshing, but you can still taste the rice. It's not my favorite sake, but I think it's a good sake.

　Light yellow color, sweet chestnut, pear and peach on the nose, clean watery attack with a hint of bitterness and umami on the palate, medium body with a clean acidity, good sharpness. The after-taste is slightly sweet.

The aroma is fruity. The mouthfeel is a little fresh, the ginjo aroma is sweet with youthfulness like a green apple, and the acidity cuts through the aftertaste a little strongly. It is said that there are only 30 bottles available in Japan!

It has a modern aroma of red-fleshed melon and white flowers, accented by a bitter aftertaste. The brewing water is probably soft, so the structure of the aftertaste is round and gentle. When enjoyed well chilled, the balance between sweetness and flavor is well balanced, but a slight rise in temperature can disrupt that balance. The impact of the first sip is good, and I think it would be an even better sake with more research into acidity. Thanks for the treat!
