Nishiwaga is a town of heavy snowfall in the mountainous region of the Ou Mountains. During the long and severe winter, snow falls from the sky as if it never stops, and on the ground, blizzards block the way of people. However, in spring, the heavy snowfall turns into abundant melt water that moistens the fields and rice paddies and grows delicious crops. This sake is a slow-brewed doburoku made from "Akita-Komachi" grown by such water and brewed with the town's pride and joy, using the limpid water for brewing.
We drank at a restaurant called "Kaba" in Morioka City, Iwate Prefecture.
They even gave me a souvenir of a bottle, and when I tried to peel off the label, it was torn...shocking.
