Identity=Proof of Existence, Adapt=Adaptation, Sensation=New Sensation, Blue Sapphire=Sincerity Comparison. Blue is the sweetest. Green is the most sour. Koshihikari pink is also delicious. The first day is good, too, but after a day, the sharpness disappears and the acidity rounds out, so I like them all.

100% Omachi Junmai Daiginjo. Compared to the orikara-mi red, it is less fizzy and has a clean sweet flavor. My personal preference is for the red, which has a more complex flavor, but the white is also popular for its unfiltered taste. It is easy to drink.

I love the rich depth of sweetness, with a nice tangy taste! It's a dangerous sake that you can't stop drinking! Junmai Daiginjo made from 100% Omachi. As a lover of Kangiku, this is it! As a fan of Kangiku, this is what it tastes like.
