I bought a bottle of "Nikko Homare Junmai Ginjo Unfiltered Nama Sake Omachi 55% Limited Sake" at Watanabe Sahei Shoten, a sake brewery located across from the roadside station in Imaichi, Nikko, Tochigi Prefecture. The 7th president of the brewery, who was in the store, told me that this was the most fragrant sake he had ever tasted, so I decided on this one.
First day after opening the bottle: Ginjo aroma and a bitter taste.
The second day after opening the bottle: I felt the fruity aroma like apple and the umami of rice, and there was a slight numbing sensation on the tongue, and when I realized it, I found it to be a very nice sake.

Personal classification: Kaoru Sake
Yumesasara 55%. Fruity, maybe banana. Sweet and tasty, with a slight bitterness and a long enough aftertaste. Delicious! I think it is good as a draft sake!
Glossy yellowish clear, with aromas of cooked rice, soy sauce, pear, and honeysuckle. The attack is rather strong, with a firm acidity and a rather long finish.
The 8th bottle of loot opened was a local Nikko Honor.
It has been a long time since my trip to Kyushu.
I am drinking it cool, feeling the water of Nikko.

Nikkohomare Junmai Ginjo Unfiltered Nama Sake Yumesasara
We tasted this at the "Traveling SAKE" event held at Hankyu Department Store a long time ago, and bought it because it was delicious.
It has become my favorite sake, and I am very fond of the sake rice "Yumesasara".
The aroma is fresh, and it is said that it tends to have a full-bodied flavor.
We will drink it cold.
The nose has a mild apple-like aroma with a hint of alkaloa in the back.
The mouthfeel is clear and refreshing...but then the umami flavor swells in the mouth.
The sweetness is not so much felt on the tongue, but the aroma that passes through the nose when swallowing is fruity, and the sweetness spreads a little.
It also has a tingling sensation like a raw sake, and I thought it might be a bit dry, but it has a Sake meter rating of +1, making it perfect for a mealtime sake👍.
