#Otaru#. I was a lecturer at a conference for companies. In the evening in Otaru, we had a get-together with the participating companies. The sake served there was Otaru's local sake. I prefer sweet sake, but it was a bit... I felt the spiciness was strong for a +5 sake, maybe because it was junmai? Today, I had to travel from Nagasaki to Otaru, I was a little tired😅.

Junmai-shu from Takaragawa Small 180ml bottle. It is a clear, dry sake. I remember the brewer saying that he thought this was the driest sake he had ever tasted. It goes straight in and disappears quickly. It has a good sharpness. It is a straightforward sake. No alcohol smell or peculiarity.

Aroma is weak, drink it and it is clean. The soft aroma makes you think it is sweet, but once you drink it, the taste expands. I thought it was sweet because of the soft aroma, but once you drink it, the taste expands and it is very dry and sharp. Super super refreshing light sake Comet (produced in Hokkaido) / Polishing 60 Soft water from Mt. It is like drinking water, maybe even water. LOL! Sake-like feeling as the temperature range rises. A few days after opening the bottle, it becomes slightly sweeter and more umami. At best, it is an acceptable food sake 😋. Sharp impression like a man's sake though it is said to be soft water The acidity does not seem to be high, but it does not go wrong with Western food. Otaru's only sake brewery The main store of 📷Tanaka Sake Brewery Otaru is a retro town with reinforced concrete buildings built in the early Showa period. The building is instantly recognizable as a sake brewery.

田中酒造　カムイトノト Tanaka Shuzo Kamui Tonoto 原材料名　ひえ 酒麹　北海道産米 アルコール　10% An interesting drink, kind of like a not sweet doburoku. It’s mild with a little acidity. Made from Millet (hie) and rice mold (Kouji), so not exactly 清酒／日本酒 Sake. If anyone objects to this post, please let me know; I will delete it.

I know it's a brewery with a lot of dryness! But it's also fruity✨ I wonder if the sweetness comes as it rolls around in your mouth. I feel like it's spicy, but in the middle of my mouth it's sweet, but at the back of my mouth at the end it might be refreshing! I can tell it's more spicy!
