It is dry and sharp. It may be the spiciest of the day. I think this is the first time I've had Shinnosuke sake rice.

Koshinohakugan Kuromatsu
The highest gold award for two consecutive years in the lukewarm category of the National Heated Sake Contest in 2020 and 2021. It's so cheap, I'm scared. It's very cheap and I'm scared. It has a mild sake taste with a rich sweetness and umami.
Koshino Shiragane Junmai
Made from Gohyakumangoku rice. It is a junmai sake with a sharp and tight acidity.

Koshino Shiragane Junmai Daiginjo Hiyahiroshi, unfiltered, bottle-hitched.
I was going to skip the Hiyoroshi, but bouken said he was going to drink it, so I tasted it. It's fruity, rich, and full-bodied, with a richness that I like.
The pricing is too cheap and buggy.
Koshino Shiragane Daiginjo Exhibit Sake 2024
Sake for the sake competition. It's clear and drinkable like water without any stickiness. It has a slight spiciness in the aftertaste.
Koshino Shiragane Daiginjo Vintage2014
Aged 10 years for a sake show. Abeno Harukas brought it because it is 10 years old. The color does not change much. It has a sense of maturity, but it tastes clean and full of flavor.

Even Daiginjo tastes good after 10 years.
This time I thought Niigata sake has many good breweries of regular sake and honjozo 🤔.
It is only a pure sake, and the taste is full of gusto, but it is unfiltered and raw, so it is fresh and tasty with a refreshing taste. It has a different flavor from Niigata Tanrei, and is highly recommended.
Koshino Hakugan is a 50% polished ginjo.
This is a light, easy-drinking ginjo-shu that is typical of Niigata sake.
Serve with tempura of wild vegetables.
