I left my first Mimuro cedar for the end of the meal, but it was sold out. I had the recommended Ichibakusuisei. I was lucky to find it because I had enjoyed it at another bar before. I guess I'll have to put off enjoying the Mimuro Sugi. I now know that Aizan is a sake rice. I wonder if it would help sales if the other sake brands were also labeled with the sake rice, or is there a reason why this is not possible?
