I love Isshaku Suisei.
My wife gave it to me as a gift on my birthday. Thank you very much.
The first touch is light, but when you put it in your mouth, the aroma spreads at once. I was surprised every time I drank it. It was a wonderful sake.

I chose this one because I wanted to drink a beautiful food wine 🍶.
There is almost no top notes, or a gentle melon-like aroma.
The overtone aroma is a calm fruity aroma of banana and melon 🍈.
I had an image of Isshaku Suisei making beautiful sakes, and this one lived up to that expectation with a clean and clear finish, with the umami of Omachi on top of that and a not-too-intrusive acidity that kept it in perfect balance.
Drink cold.
The aroma is pineapple-like.
The taste is sour with a hint of sweetness and a strong umami, with a strong bitterness at the end of the drink.
Sake with a good balance.

Rice: Aizan (Hyogo rice), Polishing ratio: 50%, Yeast: in-house cultivated yeast, Sake meter: +2, Acidity: 1.4, Alcohol: 16%.
The sweetness of the first half of the bottle is very charming, and its freshness, full of youth and dynamism, spreads on the palate. In the latter half, the complexity of the five tastes of sweet, spicy, acidic, bitter, and astringent overlap.

Purchased at a liquor store in Kirishima City, Kagoshima Prefecture.
I thought it would be difficult to taste sake from Akita, where I used to live, in Kyushu, but I happened to pass by a liquor store where it was sold.
It has a soft sweetness without any peculiarities, and the acidity that comes in the aftertaste is very delicious.
It is my favorite brand.
