This is a figure cutter purchased at Saito Sake Shop in Tochigi Prefecture, where I stopped by on my way to a Buddhist memorial service.
The uptitched aroma is modest and not very perceptible, but a melon-like aroma spreads on the palate.
Dry...it is indeed dry, but it is carefully crafted so that it does not stand out. A very well-balanced sake.
But the Saito Sake Shop has a great selection of sake. Since I had come all the way to Tochigi Prefecture, I was bound to buy some local sake, so I bought a bottle of Sentori and a bottle of Tatami, but they have an attractive selection of sake from all over the country. I was swayed in my decision to buy local sake.
It's also the first time I've seen it. I bought it because of the cool label and the fact that it was an unfiltered, unpasteurized sake.
It was my second bottle, so I don't remember the details, but I think it was delicious, with a touch of sweetness and dryness, with a good kick 😄.
The next day I had a blood test for gout in the morning, but when I honestly told the doctor about it, he laughed and said let's extend the test to the next time.

It's my favorite private hospital in my neighborhood, so they could have been flexible. I'm more of a bad person than determined 😂.
This is an unfiltered, unpasteurized sake brewed from Omachi (Omachi is the main sake brand in Japan) in the ginjo style, pressed in a bag and bottled in a tobin.
It has a gentle, full-bodied appearance that has only the elements to make it delicious.
On a personal note...well, I'm busy!

It's always long, so I guess it's just fine 😁.
Appearance is a slightly pale golden green.
Slightly hazy with very fine tailings.
The nose is mellow and gorgeously fruity.
The aroma is sweet with a mixture of sour sweet apple, melon, peach, and pear.
Acacia spills slightly from the glass and fresh chervil as it approaches the nose.
Aroma of freshly pounded rice cake rice.
The texture is thick and smooth.
It starts with a smooth, fruity, dark sweetness.
A round and fine acidity accompanies the juicy development.
While the alcohol passes refreshingly through the nose, the sweetness of the rice spreads out with a rounded flavor and disappears without a trace.
The finish is crisp, and the lingering warmth lingers in the back of the throat for a long time.
It has a deep sweetness and body with all the flavor of Omachi.
The lightness and softness that can only be produced by drops that drip down without any stress at all by bag suspension.

This premium seasonal junmai ginjo-shu is made from Omachi sake produced in Okayama Prefecture and pressed in the Fukuro-hozuri method.
It has a light and fluffy mouthfeel that only Fukuro-hozuri can provide.
