It has a mild mouthfeel and is a typical hiyaoroshi sake. I was very satisfied with this sake, having made the trip to Yamaji Sake Brewery to purchase it!
I visited Tsuruga and stopped by when I went to Mt. The proprietress was very gracious and pleasant and I bought a lot of things I wanted to try. I was so impressed that I bought a lot of things 😊.
I was the only one who wasn't driving who was allowed to taste it, so I bought a small bottle of some Junmai, which my partner seemed to resent.
Very old-fashioned aroma filled the air! Like a 🫣 very strong Yamahai. But the taste is crisp and clean.
I thought it would go well with smelly dishes such as heshiko, mackerel sushi, etc.

The beautiful proprietress told us many stories and we had a great time tasting the sake.
The Kuwasake Mojito made with Kuwasake was delicious, but the Kitakuni Kaido Shiboritate Nama Sake was refreshing and crisp. It had a subtle aftertaste with a hint of fragrance, perfect for the hot weather. Delicious!

When I visited the sake brewery in Nagahama-Kinomoto, I only tasted and did not buy the sake because of my luggage, so I bought it when they opened a store in Hankyu.
I was glad that the proprietress remembered me.
The sake was made in limited quantities to commemorate the 1532nd anniversary of the company's founding.
Perhaps because it is shipped after being stored at a low temperature, the aroma is like aged sake, and the taste is mildly sweet. A nostalgic taste from the past. It seems to be different for different tastes. I like it.
It was delicious lukewarm.
I had it with a guiinomi made by my mother: ☺️

Yamaji Sake Brewery is the 4th oldest in Japan and has a quaint atmosphere. It's nice to drink it with a sake cup. I wanted my father to drink it. ☺️

This is another item I got directly from the brewery using a Shiga Prefecture travel discount coupon.
Perhaps it is because it contains brewer's alcohol, but I have not had many daiginjos with such a clear, dry taste.
The aroma of daiginjo is soft but not strong.
It is so refreshing that you can easily enjoy it.
Personally, however, I like the sense of maturity or the richness and thickness of hiyaoroshi, a sake made by the same brewery that I drank the day before yesterday.
In terms of price, the Daiginjo is more than twice as expensive as the Hiyahoroshi, which reminds me once again that sake is not about price.
It goes well with sashimi. It's quite good.
It also goes well with Nadaman's Japanese side dishes, but it's dry, so I guess it's a safe bet. Not bad.

It is solidly dry. It has a nice full-bodied flavor with a good sense of maturity, as it is only hiyaoroshi.
It is also good warmed.
I paired it with sushi, and naturally it went well with it. Delicious.
I think it would go well with grilled tuna.
