Perhaps it is because it contains brewer's alcohol, but I have not had many daiginjos with such a clear, dry taste.
The aroma of daiginjo is soft but not strong.
It is so refreshing that you can easily enjoy it.
Personally, however, I like the sense of maturity or the richness and thickness of hiyaoroshi, a sake made by the same brewery that I drank the day before yesterday.
In terms of price, the Daiginjo is more than twice as expensive as the Hiyahoroshi, which reminds me once again that sake is not about price.
It goes well with sashimi. It's quite good.
It also goes well with Nadaman's Japanese side dishes, but it's dry, so I guess it's a safe bet. Not bad.

It is solidly dry. It has a nice full-bodied flavor with a good sense of maturity, as it is only hiyaoroshi.
It is also good warmed.
I paired it with sushi, and naturally it went well with it. Delicious.

The aroma is subdued, but the slight sweetness spreads, and the acidity in the aftertaste is just right to keep you from getting tired of drinking it.
It has a good balance without the heaviness that is often associated with honjozo, and it tastes better when slightly chilled.

We visited Yamaji Sake Brewery in conjunction with a sightseeing tour of Kimoto, Shiga Prefecture. The brewery was founded in the Muromachi period (1333-1573) and is the fifth oldest brewery in Japan. We requested a dry sake and bought it. It is a dry sake, but its flavor and aroma are more delicious than its dryness.
Purchased when visiting Kinomoto, Nagahama City.
It has a slightly moist or mellow flavor, and I think it is delicious to drink while having tsukudani or nectarines as a side dish.
I like the taste of this sake and will drink it slowly and carefully.

I ordered it when I had a meal at a Biwa trout restaurant "Yamamoto-ya Uohama" in Nagahama City, Shiga Prefecture, because it was on the menu.
It has a umami taste like Junmai-shu, but it is not too strong and easy to drink.
The brewery has a long history, founded in 1532, and in addition to sake, they also make mulberry wine using mulberry leaves. I'd like to try that one next.
I bought this one after tasting the Honjozo Shiboritate and this one which I felt was sweeter. It's a bit sticky, but it has a fresh taste. If it's too cold, it's too spicy, so a little lukewarm might be better.
