#Alcohol content 15% #Polishing ratio 55% #Shiboritate #Sake brewed with Kame-no-o, a fantastic sake rice, as the hanging rice and Yamada-nishiki as the koji rice. This is new sake, fresh! But it is thick and slightly rich. Slightly sweet like a ginjo-shu.
I received this sake for Valentine's Day. It has a rich taste like amazake. It has a nostalgic old-fashioned taste in these days of light sake. Delicious!
It is like sweetness, sourness, and umami come at the same time.
If I had to say, the aroma is sweetness first, and the taste is sourness first.
The umami comes slowly.

First "Kame no Ou Junmai Ginjo Shiboritate" 🎉.
Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish!
I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.
