We had a new bottle of wine that had been laying around for 10 months. w
Mild aroma like almonds🫘.
Firm taste with good flavor and acidity 👍️
Fresh, clean and crisp ✨
Clean aftertaste as well 🎵
A colleague gave me this sake as a gift from Fukuoka. The taste of rice spreads quickly in the mouth with a clean aftertaste. It is the kind of sake I like and I enjoyed it very much.

Cool acidity, not enough for me personally due to the lightness of the alcohol content.
Hijiki (hijiki mushrooms) simmered in a five-meat sauce
Purchased as a souvenir when I went to Fukuoka to watch a Hawks game.
I don't often drink Fukuoka sake.
For now, I wanted a sake made from Fukuoka sake rice, so I bought this one.
The rice is called "Yume-Ichikyo" and they do the squeezing by hand instead of using a machine. Luxurious!
First of all, I recommend drinking it cold to get the fullness of the rice and the dryness with a touch of acidity.
I wanted to drink it lukewarm.
The rest was served warm. The fullness of the rice spread more.
It was good.
It was delicious.
I tasted it when I visited Fukuoka and bought it because it was delicious.
It was hot, so I chilled it and paired it with yakitori (grilled chicken), and it went very well with the sweet and spicy taste of the sauce.
Maybe because it was chilled, I didn't notice much acidity, but it was a very flavorful sake.

Kiku Bijin Sake Brewery in Miyama City
This is the first time I have heard of this sake brewery!
According to honda's post, Kitahara Hakushu's sister married into the Kikubijin Brewery, so the brewery has a connection with Kitahara Hakushu.

It is light, fruity, and has a beautiful taste, but it tastes like an off-flavor.

The back side of Kikubijin.
I have never had the front side, and this was my first time to drink the back side.
The aroma has a lactic acid bacteria drink feel.
The bitterness is predominant and the umami of rice can be felt. It is neither like a dry sake nor a medium dry sake. It is a sake that fits the expression "slightly dry.
I think it goes well with all kinds of food.
