According to my faint memory, I think I bought this sake from this brewery last year, but it is TAiiiiiCHi by Yukitsubaki Shuzo. This is the 6th by Sake no Jin. I decided to buy this one after tasting it on site.
(According to the label on the back of the bottle, they use a yeast called Yukitsubaki yeast. I don't know if this is the reason or not, but the aroma on the nose when you take a sip is superb. The ginjo aroma, in other words, is just like this. The clean taste is something common to sake breweries in Kamo City (such as Muskagami). I recommend it.
Echino Yukitsubaki Junmai Ginjo
60% 15% 720ml 1240yen
A bargain product sometimes seen at supermarkets.
It is a slightly sweet, dry food sake. It has a soft taste.
It is quite good even when heated. It may also have a hint of berry flavor hidden in it.
It has a stable flavor that is just right no matter what time of day you drink it.
I would like to try another sake made with the same yeast.

I bought it because it was reasonably priced at a local supermarket. The bitterness was more noticeable than the sweetness of the rice, but it too went well with any dish.
Niigata Sake no Jin 2025!
A special bottle from Echino Yukitsubaki, a premium cuvée!
Paid tasting, but you can try it for free with insta-follow!
Snow Camellia yeast and sake rice are the pride of the Yukitsubaki Sake Brewery.
Two varieties: Snow Camellia Yeast x Koshitanrei and Snow Camellia Yeast x Yamada Nishiki.
Juicy and delicious!
Both are very tasty, but I prefer the Yamadanishiki because it has a stronger aroma and flavor!
It's soooooo good!
From mouthfeel to swallow, the water was easy to drink, and the moment I swallowed it, I could feel the slightest hint of something unique about the sake.
