So no Mai has the thickness of a laid-down, aged feel. Therefore, it is pleasantly sweet. It is said to have 16% alcohol, but I feel it is more than that. It is the same after the second day. Smoked? It has a great sense of maturity. But personally, I don't like the taste. I can't say I like it. The other day on TV, it was introduced as a way to drink highballs with sake! It was a bit of a waste, but I tried drinking it with carbonated water. It was a bit of a waste, but I tried it with carbonated soda. Perhaps because the alcohol content is lowered, it is surprisingly easy to drink, but the sense of maturity remains in the mouth. It is surprisingly easy to drink, perhaps because the alcohol content is lowered, but it still retains a sense of maturity that can be felt on the palate. I thought it was a good way to drink it.

My brother brought this as a souvenir back home. It's alsobe, but I can taste the sweetness and it tastes different from what I imagined it to be. 😅 But the clean taste doesn't seem to interfere with the food, so it's quite good. 😄 According to my brother, this is the kind of sake this brewery makes.

@Hotel Emion Tokyo Pei Rice used is So-no-Mai, Chiba Prefecture's original sake rice. It seems to be a lineage with Omachi as its high grandfather. This is also a delicious sake that goes well with Japanese food. It is refreshing, and the sweetness comes on gradually. It is an all-around sake, not limited to Japanese food.

Junmai Ginjyo (Junmai Ginjo) This was given by a friend. It has a taste of grain. It has sweetness. Smoky and savory. Full-bodied taste. It is rather tasty. A shining individuality in a calm sake quality.

We stayed at Sawara Shokecho Hotel NIPPONIA. We were recommended "Nijinshizu" at the restaurant LE UN. It was a gorgeous wine-like sake. Le Un is a French restaurant in a renovated building that used to be a sake brewery.

This bottle was recommended to me at dinner at LE UN when I stayed in Sawara City, Chiba Prefecture. It had the flavor of a ginjo with the freshness of young grass. It is a sake that suits the town of Sawara, where the old is utilized in a new way.
