Summary: Hitokochochi is easy to dissolve. It has been brewed for 77 days and has an alcohol content of 11%. It has been 4 years since EARTH2018. The new steamer increases the sweetness, so the acidity is increased. 20% koji. Thermal tank brewing. Pairing dish introduction (cold tantanmen noodles looks good).
The brewery is within walking distance from Shinshu Nakano Station. Right behind the municipal parking lot. A frozen plastic bottle was attached as a coolant.

I would go there if it were closer. I tasted Iwashimizu's "Arashigiri," but it was quite sweet, so I went with "EARTH. But it was still sweet? It is a bit expensive, but it is worth a try.
