Summary: Hitokochochi is easy to dissolve. It has been brewed for 77 days and has an alcohol content of 11%. It has been 4 years since EARTH2018. The new steamer increases the sweetness, so the acidity is increased. 20% koji. Thermal tank brewing. Pairing dish introduction (cold tantanmen noodles looks good).
The brewery is within walking distance from Shinshu Nakano Station. Right behind the municipal parking lot. A frozen plastic bottle was attached as a coolant.
This was my first time at Iwashimizu, my first time at a liquor store. They have a wide selection, and the sake tasters help you choose from a variety of selections, and you can even do tastings. I would go there if it were closer. I tasted Iwashimizu's "Arashigiri," but it was quite sweet, so I went with "EARTH. But it was still sweet? It is a bit expensive, but it is worth a try. I have always wanted to try this brand. But this is the first time I know the name. Hmmm, Iwashimizu.
As soon as I sipped it, I thought it was sogapé. The aroma is so similar to that of Sogape that I mistakenly thought it was Sogape. It smells like grapes, caramel, and nuts. The color is yellowish and there is a sense of maturity. No gassiness.
After the acidity is sharply felt, a little bit of strong sweetness arrives. It does not last long, so it has a refreshing atmosphere.
After the sweetness wears off, it finishes smoothly with almost no bitterness. A beautiful finish.
I found another great sake. The low alcohol content is also a nice touch. There seems to be quite a variety, so I will try to buy more in the future.
