Homare Kirin by my favorite Shimokoshi-san
Smoked chicken and salmon and fried akebi with miso ^^*!
The harvest and shipment of the radish are almost finished!
Mr. Nocchino.
Thank you for your comment.
There is a beautiful shop called "TADAIMAITO" in the middle of Niigata prefecture.
There is a beautiful shop called "TADAIMAITO" in the middle of Niigata prefecture.
We are shipping vegetables to there.
We are also trying our best to grow rice.
2021/09/05 Purchased at KY Liquor. 300 yen.
It is cooled. It is light, dry and refreshing. It tastes good. With sashimi that goes well with salted ponzu and sliced onions.... ...3.5+...maybe next time.
<With cold sake, it has a lightness typical of Niigata.
This is the 16th bottle in the "Kuraberu" series of 1-gallon bottles.
First, I tasted it at room temperature.
The aroma is moderate sweet and sour alcohol. It has a grain sweetness and lactic acidity, and is not fruity. This is also a retro style.
When you put it in your mouth, it has a soft sourness and sweetness at first. But in the next moment, the flavor and bitterness of the grains come out. It is more powerful than I expected.
After swallowing it, a bitter aftertaste remains. And it will disappear slowly.
This seems to be more delicious when chilled. Let's chill it.
The fragrance is gone. You can only feel a slight freshness.
The mouthfeel is lightly sweet and sour. The umami (sweet and sour) flavor spreads out from there, but it quickly recedes and breaks off nicely. Yes, it is light and dry. It has become clean. There is still a slight graininess, but it's hardly noticeable. I think cold sake is the right choice.
If I were to use a Ghibli analogy, it would be Yuki-chan from "The Cat Returns". It is a white cat. It is slightly sweet and beautiful. The word "Danrei" suits her well.
Satisfaction level: ★★★☆☆
I'll post the full version on the blog, complete with character images. If you'd like, you can search for "Korunezake" or come from the link in the profile section.
Homare Kirin Special Junmai Sake
The Homare Kirin series is an affordable standard sake from Shimokoshi Shuzo in Kambara.
This special junmai-shu is brewed with Gohyakumangoku polished to 55% and blended with the same standard Yamahai-zukuri junmai-shu to add umami and richness.
This sake won the KuraMaster gold medal in the French sake competition.
It is very smooth on the palate, with a clean, crisp, dry taste with a hint of sweetness and umami from the rice.
Warming it up lukewarm brings out the soft and fluffy rice flavor. Easy to drink. It's delicious.

★★☆☆☆
A complex aroma and a delicious taste that gently moves from the root of the tongue to the throat, almost like a heavy weight ✨✨
It is not at all overwhelmingly delicious, even with the most flavorful entrées.
