On Saturday the 22nd, I went to Ishikawa Shuzo's Appreciation Day. I bought a bottle of Yamahai Junmai sake brewed in 2021. When I took my eyes off the bottle for a moment, it turned out to be a very heated akuchin. It was so yellow that it was like a mirin without any flavor. The sweetness, umami, and acidity are all present, and the 2021-brewed sake doesn't have that old sake-like flavor, but has an appeal that wavers between mature and old sake...like a fluctuation.

あらしばり 酸味少し強め 飲んだあと苦味少しあり ポリフェノールみたいな苦味? 雄町生原酒 甘い香りがするが、そこまで甘みは感じない ちょっとだけ苦味あり おそらくあらしばりと同じような感じ 純米無濾過 少し強い甘い香りと甘い味 リピーターが多いと説明があった 確かに人気は出そうな味だった

Junmai Kameguchi from Taman Juban. What is it...a faint lychee-like aroma. There is a hint of alcohol in the aroma. When you put it in your mouth, the alcohol feeling spreads and a hint of sweetness and astringency follows. When it combines with air in the mouth, it fires with a sharp taste. A dry, powerful, fresh sake. Very tasty.

I bought it because of the cute cat label. Fussa brewery opening sake. Drunk. Slightly sweet smell, acidity comes first, sweetness disappears quickly. The taste is unexpectedly strong. The guesses are cheese kimchi and oden. Strong drinker that does not lose out to the kimchi. I like it!

On November 8, Ishikawa Sake Brewery and Tamura Sake Brewery held the Fussa Kurabiraki 2025 event on the same day, and I visited them with my family. This is Ishikawa Shuzo's limited special junmai. It has a toji (master brewer) label. The sweet aroma of rice rises softly. It is a very delicious sake with the freshness and roughness of new sake and a rich sweetness like soybean flour.

This is an autumn sake made with Taman's signature Omachi. This is a gorgeous autumn sake with a full-bodied flavor and a juicy, Omachi-like texture. It is fruity but not fresh. When fruity ripens...well, I wonder what it turns into. It's different from ripe fruit, too. It is not that ripe. Japanese sweets? No, no, yes, it might be ripe like a dried persimmon. Dried persimmon or dried sweet potato...it has that kind of charm.

drink at home Delicious. But compared to the day before, when I was drunk, does it leave a slightly bitter taste? Maybe it's my imagination. Clear and gentle sweetness. I really like this sake brew with soymilk nabe!

Taman's newest sake, Arabashiri. The young koma on the label is very youthful. The sweet melon-like aroma rises to the surface. The juicy fruitiness fills the mouth and disappears with a refreshing acidity. It has strength and roughness, which is typical of new sake, but the balance between sweetness and acidity is very good.

I was curious during the sake brewery tasting. Aged sake of five months The color is yellowish. The taste is sweet with a hint of sourness and no bubbles. Flavor: a hint of Shaoxing wine? I don't know because I don't drink much aged wine. I asked the brewer about it, and he said that it is still young as an aged sake. It is still young. Originally, it was called Hamura. Half rice? Tulip? Double cropping in the fields of Apparently? It's soft and tasty. But I think I like it better when it's younger.
