Cold or chilled: Light and soft like water in the mouth (for a moment, I thought it was a certain type of sake). The aroma and umami that rises after it passes down the throat caresses the chest. This is unique and distinctive.
Pair it with some Kappa Ebisen, which we had on hand, and you can't stop drinking this and that.
Heated sake: The aroma of sweet rice is completely different, and the sake becomes more like sake. The spiciness is assertive, but at a level that makes it easy to drink. This one can be enjoyed without guesswork.
Right is smooth and dry
Slight aroma, smooth attack. The taste is dry with a hint of umami. It is easy to drink and has a richness that lingers in the throat.
I think I drank it in the wrong order 😆.
From here, we will go around as usual with bouken.
This is the second brewery at the Shimane Sake Fair.
Nihonkai Shuzo "Japan Sea Rim" and "Uzura", Hamada City, Shimane Prefecture
I had never heard of this brewery, so I could not gather much information in advance...
But the pop-up shows an award-winning sticker with KURA MASTER and so on.
There was a series of Junmai Ginjo with different rice, so I tasted the first one.
Junmai Ginjo UZU Hachitan Nishiki 50-50%.
I personally like Hachitan Nishiki. Sour and slightly full-bodied. A little fruity and sweet.
Junmai Ginjo UZU UZU Sakonishiki 60%.
This one has a surprisingly refreshing taste, and I thought it was suitable for a mid-meal drink.
Junmai Ginjo UZU UZU Yamadanishiki 50%.
The last sake I drank, it had a full flavor that felt right at home. The taste is the most fitting and full.
Finally, we tasted a Junmai Daiginjo.
Mizusumi no sato Junmai Daiginjo.
It is easy to drink, but you can taste the umami. It also has a refreshing taste.
At any rate, I moved on to the next one quickly.

Is Kyoto Isetan the only place that regularly carries Nihonkai KANNOKAI? I remember buying sparkling and nigori at the supermarket.

Uzumi Junmai Ginjo Yamadanishiki
Mizusumi no Sato Junmai Daiginjo
All of them have a gorgeous aroma and are fruity, but I think they lack impact.
I think Nemuchi-san said that Yamadanishiki is somehow delicious.
I wonder if the impression would be a little different if it were a draft sake.
I found Hiyayogoshi at the liquor store in the supermarket where I went to buy food. I bought it without a second thought😅.
It is dry but you can taste the umami of the rice. It's delicious in its own way, but my palate is craving for something more refreshing 😅.
Purchased at a supermarket during a trip to Shimane.
It is a junmai ginjo, but the aroma and taste are not strong. It gives the impression of being a normal sake that is easy to drink.

It was a little dry, I guess, and flowed into my stomach like a zoo. (Probably because I was hungry.) After drinking it, it lingers in the mouth, but not too much.
After drinking it, it leaves a lingering taste in my mouth, but not too thick.
I was attracted by the brand name and bought it!
I would say it is slightly sweet.
You can feel the taste of rice.
It is my favorite.
It is not a luxury sake, but I think it is a good sake!
