I drank a small bottle of Hannya Yusei the day before, and it tastes better, less sharp and more rounded. It has a nice sweetness, but it is refreshing and delicious.
We had a pot of korodai nabe, udon sukiyaki, and oden at home. Drinking cold sake with ice.
We had Hatsuzakura's Aki-agari as heated sake!
The aroma is just right and the taste is elegant!
We enjoyed it with a bowl of Japanese Spanish mackerel with grated radish ✨.
I'm not sure about the store's label, but is it a draft sake? The alcohol content is high, so it feels like sipping while drinking. After the honeyed rice-sweet and sour taste similar to that of Kikuhime is gone, a dry aftertaste slowly spreads from one point on the tongue to the entire mouth. It is fun to drink while licking scotch.
Souvenir Sake for myself in Wakayama
I bought this sake after reading in a guidebook that it is the only sake brewery in Koyasan!
Hannya-yu = a secret word used in temples to refer to sake.
When Buddha drank sake, he called it "Hannya-yu" and drank it,
When Buddha drank sake, he said "Hannya-yu" and drank it. ✍️
(Guidebook information)
Rice polishing ratio: 60
Alcohol content: 15-16 degrees Celsius
Fruity aroma and mellow mouthfeel.
The end is clean but not light,
Feels a little heavy.
Enjoyed as a food sake✨.
Would go well with sesame tofu at Koyasan
Cold or room temperature 🙆🏻♀️
Might be cooler to drink it with a pottery boar cup 🩷.
First trip to Wakayama during summer vacation
I went to a sake shop near the hotel to buy a bottle of nama-zake. It has a strong umami flavor with a twinge on the nose. It is quite refreshing. A little bit alcoholic. Sake with a great view is the best.
It's a raw sake with aluzome, but I've been hooked on it lately. I used to be more inclined toward junmai (pure rice) sake, but this kind of thick, robust sake is also a swamp.
The pufferfish we received had fins for fillet sake.
Feeling obligated to enjoy it, I rummaged for sake that could be heated. I found some leftover sake that I had bought as a souvenir when I visited Koyasan last year. Kido, which I mentioned earlier, is also in Wakayama, so I thought it would be perfect. Popped a fillet. Go on boiling in hot water.
The fillet was too burnt and it was a bit dry, but it was delicious.
