I'm not sure about the store's label, but is it a draft sake? The alcohol content is high, so it feels like sipping while drinking. After the honeyed rice-sweet and sour taste similar to that of Kikuhime is gone, a dry aftertaste slowly spreads from one point on the tongue to the entire mouth. It is fun to drink while licking scotch.
Souvenir Sake for myself in Wakayama
I bought this sake after reading in a guidebook that it is the only sake brewery in Koyasan!

First trip to Wakayama during summer vacation
I went to a sake shop near the hotel to buy a bottle of nama-zake. It has a strong umami flavor with a twinge on the nose. It is quite refreshing. A little bit alcoholic. Sake with a great view is the best.
It's a raw sake with aluzome, but I've been hooked on it lately. I used to be more inclined toward junmai (pure rice) sake, but this kind of thick, robust sake is also a swamp.
The pufferfish we received had fins for fillet sake.
Feeling obligated to enjoy it, I rummaged for sake that could be heated. I found some leftover sake that I had bought as a souvenir when I visited Koyasan last year. Kido, which I mentioned earlier, is also in Wakayama, so I thought it would be perfect. Popped a fillet. Go on boiling in hot water.
The fillet was too burnt and it was a bit dry, but it was delicious.
Transparent with a slight yellowish tinge. The aroma is a combination of savory notes reminiscent of rice straw, sweet notes reminiscent of golden sugar, and mature notes reminiscent of soy sauce. The aroma is strong. On the palate, it has a rich sweetness and sharp acidity. The texture is slightly rough and thick. The flavor is firm. A stimulus that sticks in the throat. It has a long aftertaste with astringency. Full-bodied sake.
When I warmed it on the third day after opening the bottle, the aroma became stronger with a sense of maturity. The acidity has become more pronounced and the mellowness has increased.
Purchased at a sake brewery in Katsuragi Town, Wakayama Prefecture. In the mouth, a fresh and mellow sweetness spreads at first. Gradually, the spiciness increases and the aftertaste is refreshing. It is easy to drink and you can't stop drinking it.
