When we visited Nikko, we stopped by one of the sake breweries, Katayama Shuzo, where we found a light nigori of daiginjo-genshu (limited to 50 bottles), with sake lees precipitating out. The bottle looked like a whiskey. It was a little expensive sake at 5,700 yen for a four-pack. It had a nice aroma and a tangy, bitter aftertaste. It was delicious, but I personally regret that it contains brewer's alcohol.

Opened January 6, 2023 Purchased at Sunshine event. Very soft❗️ Gentle sweetness of rice ^ ^ smooth ✨ Really smooth and creamy 🍨. I just want to drink this straight up, without any nibbles 😆. When you roll it on your tongue, it has a depth like chocolate or cocoa 🍫... 🍫. Is this the first Daiginjo I've bought in any way?

Today it will be Kashiwamori. I received it as a return gift for my brother-in-law's wedding present. It is a sake from Tochigi prefecture. I knew the name, but this is my first time to drink it. When I first took a sip, it was very thick and came with a bang. It gives a classic impression. I don't know the rice polishing ratio, but I guess it is about the same as special honjozo. The alcohol content is 19%, but it is very well-balanced and easy to drink. It tastes better than I expected, and to be honest, I don't think I would buy this type of sake myself, so thanks to my brother-in-law. I'm glad that my brother-in-law, who doesn't drink sake at all, went to the trouble of selecting it for me, and that alone makes the sake taste better 😃.

Opened September 6, 2022 Purchased at Tobu Department Store Funabashi How about this year's Kashiwamori Hiyayoroshi? Thick as usual, but dry! Alcoholic stimulation but quite clear❗️Spicier than usual? I think this would go well with sashimi or grilled white fish 🐟️. Enjoy the mellow aroma in your mouth☺️.

We went to Katayama Sake Brewery, a 15-minute walk from Tobu Nikko Station. The hiyayoroshi was just released. We enjoyed it right away. It is recommended as an aperitif or a mid-meal drink.

In addition to our trip to Kinugawa Onsen, we visited a sake brewery. The brewery is almost a family business, with a small number of elite employees, and they seemed to be having a hard time. I was happy to see that they explained everything carefully. I hope they will do their best. I couldn't taste the wine this time because of the Corona. I was worried about the dry taste of the Niigata type, but... At first, it was spicy and dry, but it was easy to drink! The aftertaste was spread out and mildly delicious! I'm not sure if I'll be able to afford the Junmai Daiginjo or the Junmai Ginjo. I couldn't get my hands on the Junmai Daiginjo, lol. I'm sure you'll enjoy it.

Hiyaoroshi made with Yumesasara. It has a fruity aroma, but when you put it in your mouth, it is crisp and dry. It is easy to drink and refreshing as Hiyaoroshi. It does not interfere with food.
