This is a sake that I found at my parents' house during the New Year's holidays. It has a nice, light, dry taste. The rice used is 100% Dewa Butterfly.
Rice polishing ratio 50%.
Alcohol content 15%.
Made with 100% organic rice from Yamagata, Dewa no Sato. Alcohol content 15 degrees. Acidity 1.5, Sake degree +3, Rice polishing ratio 60%.
Good balance of rice flavor and aroma.
It is soft, light, and has an excellent crispness, making it a perfect summer sake.
Raw rice: Miyamanishiki

This wine was on its second day of opening when I got it. The ginjo aroma is rather bland and the mouthfeel is that of a crisp wine. Out of the feather splendor using 100%, it was relatively easy to get into, we paired it with Tuna Tata and Emerald Oysters and it was fine.

The aroma right after opening the bottle is, hmm? Baked sweet potato?
But when you put it in your mouth, it is totally different. There is only a little sweetness, and it is sour. The sourness. The taste of rice spreads in the aftertaste. Delicate taste. And this sharpness! I feel that it is spicier than the description.
It is clearly more of a food sake than a sake by itself. Yakitori! Yum!

I don't know this brand at all, so I drank it with no prior knowledge.
Lightly cooled and opened. The aroma is pure and fruity. On the palate, the light spiciness comes first, followed by the flavor. There is almost no acidity and the aftertaste is short. It's a junta, but since it's a flame-broiled sake, I warmed it up to about a human skin temperature, and that's a great strike for me. Simply put, it has a very crisp and sweet flavor. If it's the season, it goes well with salted grilled saury or dried persimmons for dessert.
Famous brands are delicious, of course, but I'm sure there are plenty of bargains to be found in local brands that aren't nationally available that you just don't know about and that suit your personal taste. I hope to discover those unknown tastes for myself from time to time.
