It’s texture is built around the taste of umami, with just the right level of sweetness, acidity and bitterness, their presence are clearly felt but not excessive. It’s like a piece of snowflake melting at the tip of your tongue. The nosing is not strongly aromatic but quite like fermented rice! Well done iso-jiman, I’m so incredibly impressed!
za.warudonot as elegant as juyondai, but the richness of umami and the layer is hard to give up. Personally I would put its ranking above juyondai, for the great value you get.
za.warudoLoved all the bottles apart from the first one from the left. It’s body was a bit delicate, layers didn’t come out as much as the rest. Still it remains a versatile piece of art.
