Junmai-shu, or pure rice sake as it is born, without filtration, without carbon, without additives, and without water, is called [SUPPIN].
The first mouthfeel is soft.
In the mouth, the umami of the rice can be felt and it is powerful.
It looks like a woman who is soft but has a solid core.
The sense of security is unbelievable.
Yet, it is crisp and clean, with a light acidity that is also very nice.
Before drinking it, my own image was that it was a Junmai Daiginjo brand, so I thought it would be refreshing and clean.
It is firm and robust.
It has a richness and sweetness like rice flavor, brown sugar, and honey.
The aftertaste is sharp and sharp.
I haven't tried it yet.
It might be good lukewarm. ......?
This is the first sake brewed by Yohei, the seventh generation brewer, who succeeded his father, Taiji Hamamura, the former brewer.
The sake was named "Taihei" after the first letter of both father and son's names.
How dramatic!
Knowing such a backbone makes the sake even more delicious. ......
Refreshing apple-like acidity and mild aroma.
The clear and refreshing umami. A lingering aftertaste that fades away quickly.
It is delicious.
