At the end of last year, at an event to enjoy sake... we also got a souvenir size 🤗.
It has a light miso candy-like aroma and lactic acidity. The aroma that escapes from your nose is a hint of cocoa. Slightly caramelized. The acidity is strong and the corners have been removed. I tried heating up about 1/3 of the sake, but the volatile ingredients made my eyes water a little afterwards 🤣 I preferred it cold or at room temperature.

At the end of last year, we welcomed Nigori, a series of small bottles called Niida Heroes, at an event to enjoy sake 🤗.
Rich umami, almost sweet sake 😚.
From the website, "The rich mash from the natural sake brewing process is ground using a traditional millstone to produce a pure white nigorizake. It has a lot of leesiness, is mellow and soft, and has a gentle melt in the mouth like light snow. It has a rich malt aroma, and the aftertaste has a hint of acidity from the sake brewing process. I have received this one cup of Niidashi Zenshu! When heated, the flavor of the mother sake comes through and the umami and aroma that was hidden at room temperature opens up. Take a sip and listen intently to the lingering flavors. Hot sake warms the body and mind, and soothes the fatigue of the day. We brewed this sake in the hope that you will enjoy its body-friendly, soft, warmed taste not only in winter but also in other seasons. As the sun went down and the chill in the air increased, I was still drawn to the heated sake and returned to the original booth.
I tried Terada Honke's Katori 80, a "natural sake" made only from rice grown without pesticides or chemical fertilizers and water from the brewery's well, and heated by the power of the microorganisms in the brewery.
It was slightly amber in color, with an acidity similar to that of Gonin Musume, a slight astringency, and a rich, grain-like flavor. The wheyiness is a little subdued.

We went to the booth of Nippa.
This junmai ginjo sake is brewed with Yamada Nishiki rice grown by Kiyoshi Tanaka, who has been growing pesticide-free rice in the Shinba district of Tochigi City for generations. The brewing is outsourced to Iinuma Brewery, a well-known figure in the same city.
There was a selection of new sake, kasumi, and two-year aged sake, but I had the orizake, bottled from the part of the tank that contained most of the orizake, cold.
The slightly thicker flavor was very satisfying. It was fruity and sweet, with just the right amount of floral notes to remind one of a modern, well-known sake 😚. ジェイ&ノビィGood evening, Kotori 😃.

The sake brewery is making efforts to brew sake without additives and using the "nama-moto" method, aiming to make sake that is "the best of the best of all medicines" with vitality. I was so happy because I never thought I would be able to drink it at this event. It has a yellowish, light cloudy color with the richness of the original sake yeast and a slightly matured taste. Above all, the whey-like flavor is impressive and has a hot potpourri-like atmosphere. It was cold today...so we warmed it up with the hottest sake we could find. Sandesi Nama Sake was also brought as a souvenir.

Utsunomiya Sake Brewery's Shikizakura booth. This one was recommended to be tasted only at the event. The ginjo aroma was slightly reminiscent of blue bananas, and the ori was smooth, chili, sweet and delicious on the tongue. ことりSake and Sake vol.2 at Koryu Plaza🤗

Amataka booth. They used domestic honey and sake yeast unique to a sake brewery. The honey has a soft and gentle sweetness, and a fresh and mild aroma reminiscent of fruit wine. It was refreshingly sweet and easy to drink.

Amataka booth. When we asked for a recommended drink, we got this one for 9,900 yen ⁉︎ for a 4-pack. It was served in a tiny cup for 500 yen.
It has a soft and gorgeous aroma with a hint of koji, and a gentle flavor that melts easily 😚 It is medium in thickness, and I also felt it was slightly sweet and spicy. Luxurious taste...delicious.

The taste conveyed the enthusiasm of the owner.
With the cooperation of Yonezuru Sake Brewery, he rented a part of their rice field and brewing facility, selected sake rice, planted rice, and made his own? I heard that it was a very good sake. I googled it but only found this post by Kotori 😳I'm more and more curious 🤔. ことりHi Jay & Nobby 😊It was a completely private brew and label feel. Sake to Sake: "See", "Know", "Feel" and "Enjoy" Tochigi Prefecture at Marché.
To commemorate the August 26th opening of the next-generation tramway (LRT) connecting Utsunomiya City and Haga Town, Haga County, Tochigi Prefecture, we also purchased a souvenir sake "Shikizakura Special Junmai LRT Can" with an LRT design.
It has an orthodox mid-palate flavor, but the spread of umami and richness shows the careful craftsmanship. Although it does not have the fruity taste of today's sake, I felt that it is a delicious sake that sake lovers will like.

The symbol color of the LRT project is said to be inspired by the "lightning of thunder," a symbol of the blessings of Haga and Utsunomiya.

Sake to Sake: "See", "Know", "Feel", and "Enjoy" Tochigi Prefecture at the Marché.
It seems to be a type of sparkling wine filled with carbon dioxide gas, inspired by fireworks shooting up into the night sky.
The taste is... Oh! The lactic acidity characteristic of Senkin, the slight sweetness, and the instantaneous shwashiness of the soda were quite strong and carbonated, with a gentle bitterness that made for an invigorating experience 🫧. ジェイ&ノビィHey Kotori, it's me too😃.
