★★★★ KUHEIJI JUNMAI DAIGINJO Le K RENDEZ-VOUS Rice used: 100% Yamadanishiki Polishing ratio: 50 Alcohol content: 14 Acidity: Undisclosed Sake meter: Undisclosed Not very sweet, not very spicy. Sourness-driven, white wine-like atmosphere, though the taste is completely different. Delicious 🙇.

★★★★ Fudo ORIGARUMI Junmai Ginjo Unfiltered Nama-shu Rice:Dewa Sanzu (Yamagata Prefecture) Rice polishing ratio: 55 Yeast used: 1801 Sake Degree: -7.5 Acidity: 1.7 Alcohol content: 16.2 Caution about opening the bottle. The cork never flew open, but right after opening, hold it with your finger just before it spills. As is the case every time, the sake recommended by Echizen-ya is sure to be good. I tried it with a high hurdle because of its reputation here, and it did not betray my expectations at all. It has a good balance of fizziness, sweetness, and bitterness. I enjoyed it very much.

★ WAKAZE THE CLASSIC Rice used: Camargue rice Alcohol content: 13%. Yesterday, I was wondering what to drink for the 50th check-in, but I forgot all about it and unknowingly opened this sake, which is always treated as an obstacle in the refrigerator because of its slightly fat bottle. It looks like a sweet white wine, but it is still sake. It leaves a sweet taste in your mouth. This bottle is a must have for those who want to conquer all the prefectures of Japan plus more. I enjoyed it very much.

★★★★ Haneya Junmai Ginjyo Tominokou Nama-no-Mazake Ingredients: Tominokou Rice polishing ratio: 60 Sake Degree: ±0 Alcohol content: 16 I went to the Hakodate morning market for the first time in a while. The old man is trying his best to explain in broken English, but I'm Japanese💦. On the way home, I went to Echizenya to buy some brewer's kuheiji, but bought Fudo and Haneya, which the old man recommended. I'll try the Fudo at a later date, but first the Haneya. Slightly fizzy, fruity aroma. Sweet & bitter. It was delicious 🙇.

★★★★ Daishinshu Sparkling Junmai Daiginjo Nama Rice:Hitogochiki(Nagano pref.) Rice polishing ratio: 49 Sake Degree: around +3 Acidity: around 1.5 Alcohol content: 16 Production Date: December, 2017 Aged at least 3 years in the store. Mellow, less sweet apple juice. Tastes like something else on the palate, but I can't remember what it is💦. This is delicious. Thank you, landlady, for the last bottle. I enjoyed it 🙇.
