It's here! This is the day... The day you can taste the Risshun morning press. I'm grateful for it✨. A touch of gas and just the right amount of acidity, yum! According to the toji (brewer), the finish is a bit sweeter this year. When you think about it, it's really nice to be able to drink sake that was squeezed this morning 😳. Thanks to all the people at the brewery who worked so hard from early on to bottle it. I was so grateful that I was able to finish the bottle in no time at all (*^^*)

This sake was recommended to me by an acquaintance. If you like sake, you must try this sake! I bought it for the first time! When you open the bottle, you can smell a strong aroma like the shochu! They use white koji which is usually used to make shochu to make the sour taste. The impression after a sip Is this sake? Sake? It has a sweet taste like drinking a white wine, and then a sour taste. There is also a slight astringency on the tip of the tongue. It's a complex taste, or rather a taste I've never had before! Hiroshima is famous for its oysters, and the aim of this sake was to pair it with oysters and fish, but I thought it was a little too strong to pair with a meal. But I thought it was a little too strong for a meal. It might be good with fruit or cheesecake.

Definitely delicious, Shinsei! It's a shame there aren't many places to drink it in my hometown... Just the right amount of sweetness. Got a few bottles of autumn sake at a nearby liquor store✨. First, I opened this one that I was curious about! It has a smooth mouthfeel with no miscellaneous flavors. Golden Sparrow Flying. What is this deliciousness? The sweetness that spreads out is smooth without being overpowering, and it is a sake that is very drinkable. It is brewed in a historic sake brewery that has been around since the Edo period. At 6,000 yen for 720 mm, it's not a sake you can buy often, but it's definitely the best sake I've had in a while (T_T)!

It's been a while. In a shop with good infection control. The first drink is Jyushiyo. It's too good. I can drink it easily. It's got a pineapple taste, but it's not an unpleasant sweetness that clings to you. I've been working really hard lately, so I'm really impressed that I can drink juyoshiyo at my local store😭.

The green bottle is called "Gangi Junmai Ginjo Unfiltered Raw Sake No.2". It is said that No.1 and No.2 are the order in which they were released to the world. So No.2 is the second sake released to the world! It has a strong sweetness that makes it more of a sake to be savored on its own than a sake to be enjoyed with food. I personally think it tastes better when it's a little colder than room temperature, rather than chilled to the bone. I personally thought so (^o^)

Ottersai is the sake that changed my image of sake when I first started drinking it. I've recommended it to many people and given it as a gift. It has a fruity mouthfeel that is easy to accept, but also leaves a lingering feeling of sake on your tongue for a while after you swallow. Definitely delicious✨. We enjoyed it refreshingly with beef steak salad and bonito sashimi (^o^).

My favorite gangi. This is a bottle that can only be bought in Yamaguchi Prefecture, the home of Yahya Shin. When you put it in your mouth, the sweetness comes first. It has a thick and heavy sensation, and when it goes down your throat, it's very refreshing and stimulating. I also like the rice flavor that lingers for a while. Today, I wanted to pair it with summer vegetables, so I served it with myoga rolls and grilled bitter gourd (^^)! As a reward for working on a holiday, I'm going to drink a lot today ✨✨!

I often drink Gohashi, but this Tanuki label is the one I wanted to try (*^^*). I was so excited when I got it. I'm going to drink it with fish such as sashimi of Spanish mackerel and grilled salmon. The color of the sake is a little cloudy when it is poured into a cup. When you put it in your mouth, you can taste the sourness on the tip of your tongue first, and then the sweetness and richness. It's delicious! I can't stop! I drink too much. What is the right thing to pair it with? I think it goes well with seafood pasta and Italian food.
