This is Haginodoro's new sake, freshly pressed. New sake is the best. I can see why Beaujolais is celebrated. If we market new sake in the same way, it will sell more in the world.
This is my favorite brand of Taga, a sake brewery that I have been pushing for. I can only be thankful to have encountered this refined and delicious sake with a rice polishing ratio of 70%.
Next is Asakayo's new sake. There was so much damage that the Kanji character for this year is bear. We need to have them stay in their holes as per the bear's estate.
This is the first sake I posted at the end of last year. I drank it hot last time, but this time I drank it cold. It is a seasonal sake that tastes good warmed up, but it is also good chilled.
Next, another nigori sake from Shinkai. Unlike the previous one, this one has a clear bottle with light pink nigorizake inside. Both tastes delicious😋.
Since the date of manufacture was not stated, it may have been laid up for a while, but it was a little twisted. This might be unbearable for those who like it.
There are still many sake breweries in Shiga that I have not tried. It has a freshness that is typical of nama-shu, but it is also very drinkable and does not try to be carried away by the current style of easy-drinking.
Although it is labeled as a sake for drinking at home, as the label says "mellow", it has a deep flavor and is quite tasty. As it is getting colder, I would like to match it with hot pots👍.
As the name "fully matured" suggests, this is a raw sake that has been aged for two years. Kamikai-san prefers the Uchinomimi Extra Series, but this one has a good unique flavor because it has been aged in its raw state!
