On the second bottle from Hakkaisan. What surprised me was its "difference in density. While the previous Hakkaisan was "light" and clear like water, the Otters had the sensation of the sweetness and aroma of rice rushing into your mouth the moment you took a sip. It is fruity and delicious when drunk on its own, but after drinking Hakkaisan, its richness seemed a little "heavy" to me. I think the coolness of the Hakkaisan was a better accompaniment to the sumptuous seafood dish. This was a comparison in which we clearly felt the difference in character of the sake.

Tonight, I served it with a luxurious salad of lobster and abalone. Despite its gorgeous appearance, it is a very hard, clean, light and dry wine. It is a supporting player that does not have a cloying taste and does not interfere with the elegant aroma of the seashore. I love the size of this bottle, which is also very comfortable in the hand.

Drank cold 🍶. When paired with a dish such as oden, where the broth and ingredients are full of flavor, the mild and gentle sweetness of this sake enhances the flavor of the dish without interfering with it, It was a good combination 🍢. I think the taste will be enhanced if it is warmed up to lukewarm. ☺️

Made with Kame-no-o, a fantastic rice This special bottle of sake, which can only be encountered by members only, is brewed with "Kame-no-o," which is called "phantom sake rice. Since it is sold only to members of the brewery's "Sake Sen Kuranin Goronokai," it is a rare sake that is rarely found on the market. Fire-brewed sake is also available, but we especially recommend the Junmai Ginjyo Nama-no-Hara Sake It is juicier, fresher, and has a stronger sense of dynamic flavor. However, some people may find it "peculiar" due to its unique flavor. Drinking it with ice mellows out the taste and the peculiarity disappears 💗. Also, please note that it is only available at ryokans designated by the brewery (such as Nogawa-ya Ryokan) or at a limited number of specially contracted liquor stores 🍶.

A gorgeous, sweet and delicious Junmai Daiginjo. The fruity and elegant ginjo aroma rises from the glass, and when you take a sip, a refined and sophisticated sweetness like honey spreads on the palate. After swallowing, the beautiful sweetness and umami lingers long and pleasantly. I enjoyed it with a cup of Onsunzu-yaki. Thank you for the sake.
